Ingredients:
- For the test:
- Wheat flour 1 cup
- Sugar 1 tsp
- Pinch of salt
- Butter 90 grams
- Water 3-4 tbsp. spoons
- For filling:
- Sugar 100 grams
- Butter 30 grams
- Water 3.5 tbsp. spoons
- Apples 900 grams
Cooking method:
Step 1. Dice butter. Combine flour, sugar and salt in a large bowl, add 2 tablespoons of butter. Stir with a mixer. Add the remaining oil, mix with a mixer until the mixture resembles large crumbs. Add water and mix the dough with your hands. Add another tablespoon of water, if necessary. Form a disk from the dough and refrigerate for 30-40 minutes. On a lightly floured surface, roll out the dough into a circle 3 mm thick. Sprinkle a circle of flour on both sides, brushing off the excess.
Step 2 Place the dough in a greased cake pan or on parchment on a baking sheet. Preheat the oven to 200 degrees.
Step 3Peel the apples, core and cut into slices. Put apples on top of the dough in the form of a ring, starting from the edge, so that the slices overlap each other. Leave untouched 5 cm of dough from the edges.
Step 4 Wrap the dough hanging over the mold inward, half-closing the apple slices. Grease a pie (dough and apples) with melted butter, sprinkle 2 tablespoons of sugar dough, edges and 3 tablespoons of sugar apples.
Step 5 Bake the cake in the center of the oven until the apples are soft and the edges of caramel or dark golden, about 45 minutes.
Step 6 Make icing. Put the peel and core of peeled apples in a saucepan with sugar. Pour enough water into the saucepan to cover apples and simmer for 25 minutes. Strain the syrup through cheesecloth.
Step 7 Remove the cake from the oven and allow to cool for 15 minutes. Pour with icing sugar, cut into slices and serve.
