Today we will make cheese soup with mushrooms. The soup is not the most delicious (it is without meat), but you need variety. Vegetarians who want to lose weight (there are few calories in the soup) and women can enjoy this soup. If you are a wife and decide to cook cheese soup with mushrooms for your husband, then I do not recommend doing this, it’s better to cook delicious chicken wings with sweet and sour sauce.
Ingredients
- Onions - 1 pc.
- Potato - 3 pcs.
- Carrots - 1 pc.
- Champignon mushrooms - 200 gr.
- Butter - 40 gr.
- Processed cheese - 180 gr.
- Salt - 2 teaspoons
- Ground black pepper - 1 pinch
- Water - 1.8 liters
Mushroom Cheese Soup Recipe Step by Step
Step 1:
We prepare products for cooking. We clean onions, potatoes, carrots. My mushrooms.
Step 2:
Cut everything as in the picture:
- Potatoes - in small cubes;
- Onion - finely chop;
- Mushrooms - in slices;
- Carrots - three on a coarse grater;
- Cheese - in cubes (in order to dissolve faster in water);
- We just leave the oil at room temperature.
Step 3:
We heat the pan without oil, put the mushrooms on it and fry them for 7 minutes, sometimes stirring until excess moisture leaves them. Then remove the mushrooms from the pan.
Step 4:
Add butter to the pan (already preheated, where the mushrooms were). We spread the carrots. We wait until it starts to become transparent (somewhere around 5-7 minutes).
Step 5:
Add onion. Fry it until golden brown, sometimes stirring.
Step 6:
Add the mushrooms and mix. Cover and let stand on low heat for 5 minutes.
Step 7:
Boil water. After the water boils, add the potatoes and cheese. Then again bring to a boil and let stand on low heat - 10 minutes, sometimes stirring.
Step 8:
Add our frying to the soup, mix, salt, pepper and let stand on the fire for another 5-7 minutes.
Step 9:
The soup is ready to eat. And if you don’t like it, then call your friend a vegetarian and feed him soup with cheese and mushrooms.
