Ingredients:
- For the test:
- Chicken egg 2 pieces
- Sugar 125 grams
- Pinch of salt
- Flour 200-250 grams
- Baking powder 1 teaspoon
- Kefir 200 ml.
- Red currant 250-300 grams
- For sprinkling:
- Coconut flakes 3-4 tbsp. spoons
- Sugar 3 tbsp. spoons
- Cream:
- Cream 30% 200 ml.
Cooking method:
Step 1. Beat eggs with sugar and salt, to increase the volume by 3-4 times, then gently mix flour with a spatula (1 tbsp flour left for currants) and kefir. The dough should turn out like a biscuit.
Step 2Wash and free currants from twigs. Set aside a small handful of currant to the side, mix the rest of the currant with 1 tbsp of flour and add to the dough, mix gently.
Step 3 Pour the dough into a detachable form (26 cm) covered with baking paper. Spread the remaining currants on top. Sprinkle evenly with coconut and sugar.
Step 4 Bake in a preheated oven at 180 degrees for approximately 30-35 minutes. Check the readiness of the cake with a wooden stick. Hot pie immediately generously pour cream and leave to cool directly in the form.
Step 5 Garnish the cake with a sprig of red currant.
