Ingredients:
- Flour 300-350 grams
- Sugar 100 grams
- Butter 120 grams
- Pinch of salt
- Soda pinch
- Chicken egg 1 piece
- 0.5 teaspoon lemon zest
- Milk (or water) 2 tbsp. spoons
- For curd filling:
- Sugar 1 tbsp. a spoon
- Egg 1 piece
- For fruit and berry filling:
- Berries (raspberries, blueberries, peaches, currants) or fruits (apricots, apples) as desired
- For baby:
- Flour 40 grams
- Sugar 1 tbsp. a spoon
- Butter 30 grams
Cooking method:
Step 1. Prepare the dough for the basics. Sift the flour into a bowl, add the lemon peel, grated; sugar and salt, mix, you can put a small pinch of soda to make the dough crumbly, although this is not necessary by prescription.
Step 2 Add egg and milk (or water) to the dry ingredients, mix again.
Step 3 Dice not very cold, but also not too soft (to make it convenient to cut) butter, and knead the dough.
Step 4 Put the dough in the refrigerator while we cook the curd filling.
Step 5 Knead the cottage cheese with your hands, add sugar. Beat the egg with a fork in a separate bowl and add to the curd. To grease the cake, leave 1 teaspoon of beaten egg.
Step 6 Wash and lightly dry the berries in a colander or on a napkin; wash peaches and cut into slices.
Step 7Divide the dough into two parts: larger and smaller. Sprinkle the table with flour and roll out most of the dough 3-5 mm thick, into a cake with a diameter of your shape + a couple of centimeters for the sides. A small portion of the dough will be needed for partitions between sections of the pie.
Step 8 Paste the cake with a fork so that it does not swell (or even better, load it with something like dry beans on a sheet of foil), bake at 180 degrees for 5-7 minutes. Then get the cake and lay on it an even layer of curd filling.
Step 9 Fill each pie segment with berries of different colors.
Step 10 Make sweet crumbs, grinding flour and sugar with chunks of chilled butter. Sprinkle the tart with crumbs and set to bake for 25-30 minutes at t 190 C.
