Ingredients:
- Black tea (dry) 4-5 teaspoons
- Raisins 200 grams
- Dried Cherry 100 grams
- Dried Cranberries 100 grams
- Rum or whiskey 50 ml.
- Flour 200-250 grams
- Sugar 200 grams
- Eggs 2 pieces
- Baking powder 2 tsp
- Spice mixture (cinnamon, cloves, cardamom, nutmeg, allspice) 1 teaspoon
Cooking method:
Step 1. First of all, you need to make strong tea. 4-5 teaspoons of tea pour 300 ml of boiling water. Brew tea, strain. Sort raisins, cherries, cranberries, if necessary, rinse in warm water.
Step 2 Place in a sufficiently spacious bowl and pour over brewed tea. After 15-20 minutes add rum or whiskey, leave to insist (preferably at night).
Step 3 In the morning pour sugar into a bowl with dried fruits (do not drain the liquid), add eggs, mix well. Sugar is good to use brown - it will give the baking even more flavor.
Step 4Sift flour, add baking powder, a pinch of salt if desired (salt plays favorably in sweet pastries), spices. To prepare the mixture of spices, you need to take cinnamon -1 tsp, cloves - 2 buds, nutmeg - a pinch, cardamom (grains) - 2-3 boxes, allspice - 2-3 peas, grind everything in a mortar into a powder and sift through a sieve.
Step 5 Add prepared flour to dried fruits, mix well. The mixture is rather thick, viscous.
Step 6 Lubricate the baking dish with oil, sprinkle with flour, put the prepared dough, smooth the surface and send to the oven, preheated to 160-170ᴼ C for about 1 hour.
Step 7 Remove the prepared cake from the oven, cool slightly, then remove from the mold, decorate with powdered sugar if desired.
