Ingredients:
- For the test:
- Cold butter 150 grams
- Sugar 100 grams
- Vanilla sugar 0.5 tsp
- Pinch of salt
- Flour 1.5 cups
- Baking powder 1 teaspoon
- Chicken egg 1 piece
- Cold water 2 tbsp. spoons
- For filling:
- Apricots 6-8 pieces
- Chicken egg 2 pieces
- Sugar 100 grams
- 1 tsp vanilla sugar
- Curd 500 grams
- Starch 2 tbsp. spoons
- Semolina 2 tbsp. spoons
- Baking powder 1 teaspoon
- For shtrezel:
- Cold butter 50 grams
- Sugar 50 grams
- Vanilla sugar 0.5 tsp
- Flour 100 grams
Cooking method:
Step 1. Dough: Chop the butter with sugar, vanilla sugar, salt, flour and baking powder into small crumbs, then add water and egg and knead the dough quickly.
Step 2 Wrap the dough in a film and send in the refrigerator.
Step 3 Wash apricots, cut in half, remove the seeds.
Step 4 Prepare the filling: Beat eggs with sugar and vanilla sugar, add cottage cheese, starch and semolina, baking powder, mix well with a mixer.
Step 5 Now get the dough out of the refrigerator. Spread two-thirds of the dough on the bottom of the split mold (26 cm), lightly sprinkled with flour. Roll up the rest of the dough with a sausage and distribute along the side of the form, forming the edge of the pie.
Step 6 At the bottom of the pie lay the halves of apricots, lay the curd filling on top.
Step 7 Make a shtreisel. First chop the butter with sugar, vanilla sugar and flour, then rub it into small crumbs with your fingers. Spread the shtreisel on top of the pie.
Step 8 Bake the cake with the oven preheated to t 170 degrees for 45-50 minutes. Then cool well in the mold.
Step 9 Cutting the finished cake can only be completely cooled, otherwise the filling will flow.
