Ingredients:
- Butter 6 tbsp. spoons
- Brown Sugar 150 grams
- Sugar 50 grams
- Chicken egg 1 piece
- Egg yolk 1 piece
- Red wine 150 ml.
- Flour 200 grams
- Vanilla extract 1 tsp
- Cocoa 2 tbsp. spoons
- Soda 1/8 teaspoon
- Baking powder 0.5 tsp
- Salt 1/4 teaspoon
- Ground cinnamon 0.5 tsp
- For cream:
- Mascarpone cheese 100 grams
- Fat cream 100 ml.
- Sugar 2 tbsp. spoons
- 1/4 tsp vanilla extract
Cooking method:
Step 1. Preheat the oven to 160 degrees. Line a round baking dish with parchment, grease it with butter and lightly sprinkle with flour or drizzle with non-stick oil. Beat butter in a large bowl with a mixer at medium speed. Add sugar and beat for about 3 minutes. Add egg and yolk, beat. Then beat with red wine and vanilla extract.
Step 2 Sift flour, cocoa, soda, baking powder, cinnamon and salt together on top of the egg mixture. Stir with a rubber spatula.
Step 3 Put the dough in the prepared form. Bake for 25-30 minutes until the knife inserted into the pie comes out clean. The top of the pie should be shiny and smooth.
Step 4 Let the cake cool in the mold for 10 minutes, then remove from the mold and allow to cool completely on the wire rack. This cake is well stored both at room temperature and in the refrigerator. If desired, sprinkle the cake with icing sugar.
Step 5To prepare the cream: beat the mascarpone, cream, sugar and vanilla extract together with a mixer. Garnish with cream each slice of the pie.
