Ingredients:

- Wheat flour 150 grams
- Baking powder 1 teaspoon
- Butter 75 grams
- Egg yolks 3 pieces
- Pinch of salt

- Apples 3-4 pieces
- Vegetable oil 15 grams
- Ground cinnamon 5 grams
- 1/3 nutmeg
- For meringue:
- Egg whites 3 pieces
- Icing sugar 120 grams
Cooking method:
Step 1. Apples - wash, remove the core, cut into slices about a centimeter thick. Cover the baking sheet with a piece of baking parchment, put the sliced apples, pour over refined vegetable oil (odorless). Bake on the middle shelf of the oven for 25 minutes at a temperature of 165 degrees.
Step 2While apples are baking, make dough for a biscuit. Cut the butter into small cubes.
Step 3 Add premium grade wheat flour mixed with baking powder and small salt to the oil. Grind the ingredients until crumbs are formed.
Step 4Break the raw eggs into a deep bowl, separate the yolks from the proteins. Then mix the yolks with flour and butter crumbs, quickly knead the dough.
Step 5 Separate about 50 g of dough, put in the freezer. Roll out the remaining piece with a layer 4-5 mm thick. To transfer shortcrust pastry to a baking sheet, it needs to be rolled out between two sheets of parchment. Form a round biscuit on a baking sheet, with a tablespoon, gently crush it in a circle to make a low side.
Step 6Place the cooled baked apples on the dough with a fan. You can put several layers.
Step 7 Sprinkle apples with ground cinnamon and grated nutmeg. Put the pan in a cool place, but for now you need to prepare the meringue.
Step 8 Beat raw egg whites with a mixer until a lush white mass is obtained. Then slowly pour the powdered sugar. The powder should be strewed in small portions, otherwise the whole kitchen will be covered with white dust. Beat the protein with powder to a state of stable peaks, put gently on apples.
Step 9Distribute the meringue across the apples in an even layer, the mass is dense, so there is no need to be afraid that it will creep.
Step 10 Take the frozen dough out of the freezer, grate it on a coarse grater, sprinkle the meringue evenly.
Step 11 Send the baking sheet into the oven heated to t 160 degrees for 40-45 minutes. Watch out for pastries, but don’t open the door! Meringue is a very moody thing: just a little, it settles, and the cake turns out completely flat. If necessary, after 20 minutes, the baking temperature can be reduced to 130 degrees.
Step 12 Turn off the oven, open the door, leave the cake in the oven until it cools completely.
