Ingredients:
- Chicken egg 2 pieces
- Lemon juice 1 tsp
- Parmesan cheese 2 tbsp. spoons
- Olive oil 100 ml.
- Mustard 2 tsp
- 2 cloves of garlic
- Salt or soy sauce to taste
Cooking method:
Step 1. For the proper preparation of the sauce, you need to boil the eggs in a special way: the egg shell, on the blunt side, needs to be pierced with a needle. Place the egg in boiled water for 1 minute. Eggs prepared in this way are broken into a bowl, lemon juice is added and whipped.
Step 2 Grind garlic using a press, add mustard and mix with eggs. An important point is mustard should be sweet, without a bitter aftertaste.
Step 3 Grate the Parmesan cheese on a fine grater and pour into the egg mixture, mix thoroughly. Gradually add olive oil to constantly mix the sauce with a mixer or whisk.
Step 4 Add salt or soy sauce (optional) and beat again. You can also add anchovies to the sauce and beat with a blender.
