Ingredients:

- Blackcurrant 300 grams
- Sugar 100 grams
Cooking method:
Step 1. Sift the flour. add baking powder. Mix.
Step 2 Carefully separate the yolks and add them to the dough (put down the proteins, we will need them). Pour sugar, put butter. Also, for flavor, in the recipe for making a shortbread cake with blackcurrant, you can add a little zest of orange or lemon. Mix everything properly until smooth.
Step 3Put the dough in a heat-resistant form. Send to the refrigerator for 20-30 minutes.
Step 4 Next, preheat the oven and send the cake there for 15-25 minutes (depending on the volume of the mold and the thickness of the dough). The edges should lightly brown. Remove the cake and let it cool slightly.
Step 5 Cook the filling. To do this, send the proteins with a pinch of salt into a deep bowl and beat. Add sugar and corn starch. Beat the mass for at least 5 minutes until dense peaks form.
Step 6 Wash the berries and dry well with a paper towel. Add to the filling only half the berries of black currant, the remaining berries as a decoration. Mix gently.
Step 7 Put whipped squirrels with berries on a cake and smooth. Submit the form to the oven for 10-12 minutes.
Step 8 When a rosy top forms, the cake can be taken out. After it cools down a little, sprinkle it with berries and can be served.
Step 9 If desired, the cake can be supplemented with ice cream, it will be even tastier!
