Ingredients:
- For the test:
- Flour 250 grams
- Butter 250 grams
- Honey 1 tbsp. a spoon
- Chicken egg 1 piece
- Pinch of salt
- For cream:
- Milk 250 ml.
- Sugar 50 grams
- Chicken egg 3 pieces
- Vanilla 0.5 Pod
- Corn starch 17 grams
- 1/4 lime
- For glaze:
- Water 60 grams
- Sugar 60 grams
- Gelatin 3 grams
- To decorate:
- Fresh strawberries 400 grams
- 1/4 lime
Cooking method:
Step 1. Pour flour into a bowl and put slices of cold butter.
Step 2 Mix gradually with your hands and rub the flour and butter until large crumbs.
Step 3 Add honey, half a beaten chicken egg, salt and mix.
Step 4 Knead until the dough is smooth. Wrap in plastic wrap and refrigerate for at least 2 hours (preferably at night).
Step 5 Roll out the chilled dough with a thickness of 3 mm and cut a circle in diameter larger than the baking dish.
Step 6 Put the circle in a greased form, tightly distribute along the sides and a rolling pin to remove excess dough. Make punctures all over the surface and refrigerate for another 1 hour.
Step 7 Put a sheet of baking paper into the mold with the cooled dough and pour the beans so that when baking the dough does not deform and the cake is smooth. Send to the oven at 170 degrees for 15 minutes, then carefully remove the beans and paper and bake for another 5-7 minutes. Sand cake for the cake is ready to cool.
Step 8 In parallel with the test, prepare the icing and cream. To glaze, heat a bowl with sugar and water, boil for 1 minute and cool.
Step 9 Pour gelatin with a small amount of cold water, leave for 5 minutes and pour into chilled syrup to 50 degrees, mix and send to the refrigerator.
Step 10 For cream: put a bowl with milk, half sugar, lime zest (1/4 pcs.) And vanilla on the fire.
Step 11 In another bowl, beat the yolks with starch and sugar.
Step 12 As milk boils, remove from heat and pour into the beaten egg mixture through a sieve 3 times in portions, continuously stirring so that the yolks do not curl.
Step 13 Put the mixture on the fire and cook, whisking constantly, until the aromatic cream thickens.
Step 14 Put the fragrant cream in a bowl, cover and cool in the refrigerator. Then beat lightly.
Step 15 On a shortbread cake lay out the fragrant cream and evenly distribute.
Step 16 Rinse the strawberries and cut into slices into 3 parts, if large. Arrange the prepared strawberry slices in a circle on a cream.
Step 17 Heat the glaze to 50 degrees and grease the strawberry slices.
Step 18Add the zest of lime and the delicious strawberry tart.
Step 19 Slice and serve fragrant strawberry pie.
