Ingredients:
- White loaf 200 grams
- Chicken fillet 300 grams
- Bunch lettuce leaves
- Parmesan Cheese 70 grams
- Garlic 1 clove
- Olive oil 3-4 tbsp. spoons
- 5 quail eggs
- Cherry Tomatoes 5-7 pieces
- For refueling:
- Chicken egg yolks (boiled) 2 pieces
- Mustard (ready) 2 tsp
- Garlic 1 clove
- Lemon juice 2 tbsp. spoons
- Olive oil 100 ml.
- Salt, pepper to taste
Cooking method:
Step 1. Rinse the chicken fillet under cold running water, remove the films and grate with pepper and salt to taste. If desired, you can use other favorite spices for chicken - from this the taste of Caesar salad will be even richer and more refined. Then wrap the fillet in food foil and place in a preheated oven. Bake at 200 degrees for about 30 minutes until cooked.
Step 2 Prepare aromatic oil for garlic croutons. To do this, take 3-4 tablespoons of olive oil and squeeze a small clove of garlic into it through a press. Leave to infuse for approximately 10 minutes.
Step 3Cut the loaf into small cubes. Then pour the garlic oil into the pan, heat it and pour the bread cubes.
Step 4Fry over medium heat until appetizing crispy golden crust.
Step 5Grate parmesan on a medium grater.
Step 6 Boil the eggs in a steep, peeled shell. Chicken eggs - separate the proteins from the yolks. And cut the quail eggs into slices.
Step 7 Make a dressing for the classic Caesar salad: for this, grind the yolks with mustard into a homogeneous mass. Add lemon juice, vinegar, squeezed garlic, salt and pepper. Mix well again. At the very end, add olive oil and mix again or whisk with a whisk.
Step 8 Wash and cut cherry tomatoes into 4 parts.
Step 9 Cut the baked chicken fillet into small cubes (about the same size as croutons).
Step 10 Lettuce leaves (for Caesar it’s better to take Romano or Iceberg lettuce) tear into medium slices with your hands and put on a dish.
Step 11 Put chopped chicken on top.
Step 12 Then pour the fried croutons on top.
Step 13 Then pour the ingredients with the prepared Caesar salad dressing.
Step 14Sprinkle grated parmesan on top.
Step 15 Garnish Caesar salad with quarters of quail eggs and cherry tomatoes.
Bon Appetit!
